It’s almost Turkey Time!! Which means hours in the kitchen cooking and baking, calorie packed meals and the general hustle and bustle of the season can throw even the most dedicated off their healthy eating plan. Who has time to come up with healthy meals this time of year? Well, thanks to our friend Susan she has provided us some delicious quick and easy recipes that anyone can do!

Turkey meatloaf/meatballs

1 pound ground turkey
1 small onion finely chopped
1 bell pepper finely chopped
Mushrooms finely chopped
1 jalapeño finely chopped
Garlic
Pepper
Mrs dash onion and herb

Sweat the moisture out of finely chopped mushrooms and drain.

Cook onions, peppers, garlic and jalapeños then add mushrooms. Set aside and cool. Mix ground turkey, one egg and add cooked sautéed vegetables.

Shape into balls or small loafs.

Bake at 375 degrees for 15-20 minutes. (You can broil on high for a few minutes if you like them browned. Watch carefully as they can burn quickly!)

Healthy muffins

4-5 egg whites
1/2 cup oats
1/2 cup shredded zucchini
Stevia and cinnamon to taste

Bake for about 12 minutes at 375 degrees in greased muffin tins.
Zucchini chips

Zucchini sliced thinly (mandolin comes in handy)
Mrs. Dash seasoning

Preheat oven to 400 degrees.

Sliced zucchini to 1/8th-1/4 th inch thick.
Pat dry
Spray a foiled cookie sheet with cooking spray
Spread cups out flat
Sprinkle with Mrs. Dash
Bake for 12-15 minutes
Cauliflower mash

Boil cauliflower a little more than normal, so,it’s super tender.
Drain and put in blender.
Throw in some Mrs. Dash garlic and herbs.
Blend for 10-15 seconds.
Spray with spray butter, if desired.

Lettuce wraps

1 Lb ground turkey
1/4 medium onion diced
1/4 green bell pepper diced
1 stock celery diced
1/2 tomato diced
2 cloves of garlic minced
Cayenne pepper
Basil
Mrs. Dash onion and herb seasoning
Romaine lettuce washed and separated

Cook all (minus tomato) ingredients in a frying pan until turkey is fully cooked. Add in tomatoes and simmer for about two minutes.

Spoon into lettuce leaf and enjoy!

Healthy treat

3 mashed bananas (ripe)
1/3 cup apple sauce
2 cups oats
1/2 cup raisins (optional)
1 tsp vanilla
1 tsp cinnamon

Spread in baking pan and bake at 350 for 15-20 minutes.
